Enchanting aromas and textures and sublime culinary artistry, perfectly served. Chef Martin Hermann has been earning stars for the Dollenberg for more than two decades. He is also in charge of gastronomy for the hotel restaurant, the Kaminstube and Bauernstube dining rooms, and the hotel’s Renchtalhütte.

Chef de Cuisine Martin Herrmann
Back in 1982, when he was just a humble apprentice in the hotel’s kitchen, Martin Herrmann caught the eye of the Dollenberg Resort’s Patron and head chef Meinrad Schmiederer. In 1991, Herrmann’s drive and ambition took him to the rank of Chef de Cuisine. He then went on to win Le Pavillon’s first Michelin star in 1998, with the second following in 2010. Herrmann is a member of Jeunes Restaurateurs d’Europe. He belongs to Germany’s elite group of 33 two-Michelin-starred chefs – only nine have managed to obtain a third. The person responsible for the great service at the Dollenberg, and especially at Le Pavillon, is Ulrike Herrmann, Martin’s wife as well as sister to proprietor Meinrad Schmiederer.
